1 chicken

4 cloves of garlic

1 1/2 onion, chopped

3 tablespoons sambal oelek

chili pepper to taste, finely chopped

4 tablespoons sweet soy sauce

2 tablespoons tamarind (from a jar)

1 1/2 teaspoon terasi (fermented shrimp paste), crumbled

1/2 tablespoon mustard

1/2 cup water


2 teaspoons brown sugar or gula djawa

garnish with sliced spring onions and chili pepper


Cut chicken in pieces and fry it in some oil until half cooked.

Put the garlic, onions, sambal oelek, chili pepper, sweet soy sauce, tamarind, terasi and mustard in a blender.  Add this mix to the chicken.  Add salt and goela djawa to taste.

Let simmer till the sauce has reduces and chicken is fully cooked. Ad some water if needed.


Serve with steamed rice and pickled cucumber.
